Easiest Peach Cobbler Recipe

Starting from a Betty Crocker recipe, I made some changes and turned out this quick and easy cobbler with minimal clean up. It made a great breakfast. This recipe will serve 2 or 3 for breakfast. If you are serving it for dessert, plan on this much for 4 people. If you want to double the recipe, use 2 bread pans and make them individually.
Into an ungreased breadpan,
add 1/2 cup biscuit mix
and 1/2 cup milk
and 1/4 teaspoon ground nutmeg.
Mix them together in the pan.
Drain a 15 ounce can of sliced peaches, and add them to the pan, distributing evenly.
Sprinkle 1.5 Tablespoons chopped pecans over the peaches.
Sprinkle 1/4 cup packed brown sugar over everything.
Pour 1/4 cup melted butter over all.
Bake for 30 minutes in a 375 degree oven.
Serve warm in bowls.

Brunch

One of the things I LOVE about having my own business is having a leisurely brunch...everyday. I do brew the coffee in the morning, but before it's all gone, right around 11:00, I start thinking about brunch. For his birthday, I took Rory to brunch at Sante. I wanted him to have a taste of my life. Sante serves brunch all day everyday - they had me at bonjour!

I thought I would share the omelet I made for my solo brunch today, just in case you can't make it to Sante (which would earn 5 stars from me, if I had stars to give.)
Ingredients:
almost 2 Tbl butter, melted in the pan
one green onion, chopped - add it
one mushroom, chopped - add it
a huge handful of washed and dried fresh spinach - roughly chopped - add it

Seasoned with salt, pepper, garlic powder

3 slices of cooked bacon leftover from yesterday's brunch - roughly chopped - add it

2 eggs beaten together lightly - add them

while the eggs are cooking, I add to the pan about 1/4 cup of hollandaise leftover from the other night when we had asparagus

It all gets mixed up and cooked together.

The 1/4 of an avocado on top really made this a meal that will fuel me well for the day.

I know you are laughing right now. Like that needed the avocado to make it last. It was the perfect flavor anyway. How do you like my food photography? It tasted better than it looks.

Bananas for this Recipe

Banana Muffins with Peanut Butter Vanilla Frosting

This is my kids favorite recipe. (I love it too. Rory eats them sans frosting, the party pooper.) My family rigs it, so that two out of every bunch of bananas I buy get ripe enough that I have to make muffins.

Mix until creamy -

1/2 cup softened butter

3/4 cup sugar

3 eggs

2 ripe mashed bananas

1 teaspoon vanilla

1/3 cup vanilla yogurt (I like Mountain High, original style)

Combine these dry ingredients, then add them to the mixture, stirring until well mixed-

1 and 3/4 cup flour

1/2 cup wheat germ

1/2 teaspoon baking powder

3/4 teaspoon baking soda

1/2 teaspoon salt

Fold in about 1/2 cup of dried fruit (I make some without the dried fruit for the boys, and then add the fruit for the rest of us) I like to use orange flavored cransins and raisins, some of each.

Makes 18 regular size muffins. Line your muffin pans with cups or spray with cooking spray. Spoon into cups (the batter will be pretty thick) and bake at 350 degrees for 20 minutes. They should be slightly browned on top.

After cooling, frost with one of these:

Make Honey Peanut Butter Icing by mixing equal parts honey, butter and peanut butter

or

For the not so naturally inclined, use this one:

1 pound of confectioners' sugar (that is 1/2 of a package - I don't measure it)

1/4 cup of softened butter

1/3 cup peanut butter

about 4-6 tablespoons of milk

1 teaspoon vanilla

Beat his until smooth. There will be extra, which I store in the fridge and let the kids use on graham crackers when the muffins run out.

Now, I am going to sew elsiee's frame purse, so she doesn't think I am some kind of lame blogger who gives prizes but is slow in sending them. If you want to share this recipe with anyone, just link to the blog post, if you would. A side note, if you search for "recipe" on Etsy, some actual recipes come up as well as recipe cards, etc. Cool!
