Easiest Peach Cobbler Recipe

Starting from a Betty Crocker recipe, I made some changes and turned out this quick and easy cobbler with minimal clean up. It made a great breakfast. This recipe will serve 2 or 3 for breakfast. If you are serving it for dessert, plan on this much for 4 people. If you want to double the recipe, use 2 bread pans and make them individually.
Into an ungreased breadpan,
add 1/2 cup biscuit mix
and 1/2 cup milk
and 1/4 teaspoon ground nutmeg.
Mix them together in the pan.
Drain a 15 ounce can of sliced peaches, and add them to the pan, distributing evenly.
Sprinkle 1.5 Tablespoons chopped pecans over the peaches.
Sprinkle 1/4 cup packed brown sugar over everything.
Pour 1/4 cup melted butter over all.
Bake for 30 minutes in a 375 degree oven.
Serve warm in bowls.

Pie Crust Perfection

I believe that being confident is the beginning of creativity. Once you have mastered the basics of a thing, you can spin-off with good results. I took one of the pie making classes at Craftsy. I did make a great apple pie that I did not photograph. And I made what you see here, cinnamon sausage and homemade hot pockets. Thanks to Evan Kleiman's great teaching, I can make fabulous, flakey, tender pie crusts. We are still having hot weather, but as soon as it turns cold, I will be diving into the soups class too. It's fun to learn new skills at Craftsy. All classes are on sale this week end too!

Brunch

One of the things I LOVE about having my own business is having a leisurely brunch...everyday. I do brew the coffee in the morning, but before it's all gone, right around 11:00, I start thinking about brunch. For his birthday, I took Rory to brunch at Sante. I wanted him to have a taste of my life. Sante serves brunch all day everyday - they had me at bonjour!

I thought I would share the omelet I made for my solo brunch today, just in case you can't make it to Sante (which would earn 5 stars from me, if I had stars to give.)
Ingredients:
almost 2 Tbl butter, melted in the pan
one green onion, chopped - add it
one mushroom, chopped - add it
a huge handful of washed and dried fresh spinach - roughly chopped - add it

Seasoned with salt, pepper, garlic powder

3 slices of cooked bacon leftover from yesterday's brunch - roughly chopped - add it

2 eggs beaten together lightly - add them

while the eggs are cooking, I add to the pan about 1/4 cup of hollandaise leftover from the other night when we had asparagus

It all gets mixed up and cooked together.

The 1/4 of an avocado on top really made this a meal that will fuel me well for the day.

I know you are laughing right now. Like that needed the avocado to make it last. It was the perfect flavor anyway. How do you like my food photography? It tasted better than it looks.

Martha Shakes Her Head and Says Tsk Tsk

My mama gave me a great calorie saving tip from a Weight Watcher's friend of hers. Instead of the oil, water, and eggs in a cake mix, use 12 ounces of soda - club soda or soda pop, and bake as usual. It makes the cake very moist and a little sticky, but it tastes great. I had a dream the other night that Martha Stewart was in my house and she was looking through the pantry. I wondered, what can I show her that she'll want to put on her show? She interrupted my thought by asking, why do you have cake mixes? You know there are recipes for cake. I answered, because sometimes I am in a hurry. She said, why would you ever be in a hurry for cake? When I told Rory the dream, he asked why do you use cake mixes? I think it runs in my blood. When my mom was growing up, her mom worked at the flour mill and brought home cake mixes for the family to test. CakeMix=Mama. Now CakeMix+Soda=LighterMama. But maybe that disqualifies me from The Martha Stewart Show. Oh, well, I love my mama more than Martha.
